Martie's "Use What You Have Holiday" Ideas: Cylinder Vases Two Ways

HOLIDAY PAPER LANTERNS AND RIBBON WRAPPED VASES

This is a great way to use the cylinder type vases you get when someone sends you flowers! You can wrap the vase in ribbon as I did with the one on the left or you can make a cover for the vase using scrapbook paper or heavy weight wrapping paper to create a "tube" to slide over the cylinder and you'll completely change the look! So that the light shines through, use a hole punch or a fancy punch you can find at the hobby store like this one with stars. The light shines through and makes it look really festive.

If you plan to use a candle, be sure and put kosher salt, sand, beans, or something in the bottom of the vase so it won't crack from the heat of the candle.

I have done these lanterns for lots of occasions-they are the perfect way to add a pop of holiday color without spending a fortune. You can use wrapping paper but I like the weight of scrapbook paper. See more paper lantern ideas for parties and weddings....

Martie's "Use What You Have Holiday" Ideas: Make Apple Votives 

For those of you who could not join us this year at the Metropolitan Cooking & Entertaining Show in Washington, DC... we missed you! We had a blast and even had time to explore our Nation's capital on  a totally gorgeous weekend. We hit the foodie spots like Jaleo for tapas and some of the standards like the Old Ebbitt Inn. We had a wonderful weekend and met so many nice folks!

The holidays will be here before you blink... so here are some of the ideas I included in my "Use What You Have Holiday" workshop using re-purposed items you have around the house for holiday decorating and entertaining.  

APPLE VOTIVES

6 apples, very ripe (select apples that sit up straight)

6 tealights

clear acrylic spray

These were a big hit and were the easiest thing ever. Use a teaspoon or a mini melon baller to scoop a shallow hole just slightly larger than your tealight.

You want the tealight to sit down into the apple so when the candle melts and the wax is hot, it won't spill out over the top of the apple. After you check the apple to make sure the tealight fits properly, remove it and spray the inside of the apple with the acrylic spray to keep the apple from turning brown. Once dry, replace the tealight.

Recipes from Friends: JoAnn's Key Lime Martini Recipe

Party thrower JoAnn Harrison's recipe for Key Lime Pie MartinisI love dessert cocktails... you get the sweet and the cocktail in a glass and don't have to double up on the calories! This holiday season, offer your guests a selection of dessert cocktails. A dessert drink bar is easy to set up. Provide lots of glasses, cocktail shakers, liqueurs and mix-ins and a recipe for 4-5 different dessert drinks so guests can make their own. This is a sure-fire hit!! This recipe for Key Lime Pie Martini was provided by our sweet friend JoAnn Harrison. Thank you JoAnn! These are my new favorite!

KEY LIME PIE MARTINI

Key Lime Pie Martini with optional whipped cream and crushed graham cracker toppingMakes 1 cocktail

3 tablespoons Licor 43 (vanilla liqueur)
1 tablespoon lemon or citrus flavored vodka
2 tablespoons key lime juice or 2 tablespoons fresh lime juice
2 tablespoons heavy cream
2 tablespoons finely crushed cinnamon graham crackers (optional)

Whipped cream, lime zest, and/or lime wheels for garnish (optional)

Add all ingredients except garnish in a cocktail shaker. Add ice. Shake until frothy and well chilled. Pour into chilled, stemmed martini glasses which have been rimmed with finely crushed cinnamon graham crackers and a lime wheel. Or you can get really decadent and garnish with a dollop of fresh whipped cream and lime zest.

No Time to Bake? Make Dessert Cocktails!

Did you forget that you have friends coming over or maybe you wanted to make a special dessert for your party but just ran out of time? That happens to me all the time! Luckily, I've got some delicious and decadent desserts in a glass that you can mix, shake, and pour in about five minutes... Can you say sa-weet??

Fast and Delicious Appetizer Recipes: Easy Goat Cheese Truffles and Stuffed Endive Leaves

These are two of my favorite fast party recipes because they are easy, I always have the ingredients on hand, and guests love love love them. They both start with the same basic ingredients: goat cheese blended with cream cheese and a little heavy cream. You can add more/different herbs to totally change the recipe for both of these... Be creative and add fruit and toasted nuts or ingredients in your fridge: raspberries, strawberries with a balsamic vinegar reduction drizzle, some Greek yogurt, honey and toasted almonds.... the possibilities are almost endless!

GOAT CHEESE TRUFFLES

You can also make these with gorgonzola, blue, or feta cheese but I really like the goat cheese version the best. Plus I always have Belle Chevre goat cheese in the fridge! These are pretty lined up on a serving dish or even as goat cheese "lollipops" served on a white candy stick you get in the baking and candy making section of the store.

6 ounces (3/4 cup) goat cheese, softened

2 ounces (1/4 cup) cream cheese, softened

2 tablespoons heavy whipping cream

1 teaspoon fresh chives, finely chopped fine

1 teaspoon fresh thyme, chopped fine

1 tablespoons fresh parsley, chopped fine

Salt and pepper to taste

1/2 cup toasted pecans or walnuts, finely chopped

Mix all of the ingredients except the whipping cream nuts in a bowl. Add the whipping cream a little at a time, using a fork to whip the mixture until it is smooth. Form into bite size truffles. Don't let the mixture get too creamy or the truffles will not hold together well. Roll in the toasted nuts and chill until serving time.

Variation:

Omit the herbs and reduce the whipping cream by half. Add a tablespoon of your favorite liqueur- I like Grand Marnier. Roll the truffle and roll in pecans. Drizzle with melted chocolate or shave chocolate over them at serving time. Sooo good!

CHOCOLATE AND CHEVRE TRUFFLES

A sweet spin on the recipe above, you can use your favorite liqueur and chocolate to create a quick and delicious dessert.

4 ounces (3/4 cup) goat cheese, softened

4 ounces (1/4 cup) cream cheese, softened

1 tablespoon heavy whipping cream

2 tablespoons Confectioner's sugar

2 tablespoons Amaretto (or your favorite) liqueur

1 1/2 tablespoons finely grated semi-sweet chocolate plus 1/4 cup plus more for garnish

1/4 cup toasted almond slices, chopped fine

Use a fork to mix all of the ingredients except the almond and the chocolate together. Use a microplane to grate in the chocolate. Use a small ice cream scoop or a spoon to form into bite size truffles. If the mixture is too stiff, you can add a little more heavy cream or liqueur. Mix the almonds and 1/4 cup grated chocolate (you can sub cocoa powder) and spread a thin layer on a piece of plastic or a cookie sheet. Roll the truffles into the mixture to coat. Chill until time to serve. Grate or drizzle chocolate over the truffles just before serving.

BELGIAN ENDIVE LEAVES STUFFED WITH GOAT CHEESE AND TOASTED WALNUTS

Endive is a leaf vegetable in the lettuce family. If you can’t find it, you can substitute another lettuce or almost any other vegetable. The goat cheese spread can be spread on toasted bread or served with crackers also if you don't have or cannot find Endive.

Two or three heads Endive (Target always has it in the produce section)

6 ounces (3/4 cup) goat cheese, softened

2 ounces (1/4 cup) cream cheese, softened

2 tablespoons heavy whipping cream

1 teaspoon fresh chives, finely chopped fine

1 teaspoon fresh thyme, chopped fine

1 tablespoons fresh parsley, chopped fine

Salt and pepper to taste

Toppings:

Toasted nuts of your choice: almonds, walnuts, pecans, etc... toast them for about 4-5 minutes at 350 but watch them because nuts burn so easily!

Fruit: Orange, raspberries, strawberries, fig, etc all taste great with goat cheese

Mix all ingredients together except the endive and the toppings with a fork, stirring until fluffy. You can use a mixer to whip it up if you want it extra fluffy. Spread on the base of the endive leaves. Top with fruit and toasted chopped nuts. Yum.
