GIRLS NIGHT IN: HOST A DIY CENTERPIECE PARTY!

The nice folks at Seagram's Escapes asked me for some Spring party ideas... here's one I think you'll love!

With Easter just weeks away, I've got a fun (and productive) party idea for your next Girls Night In get-together. Why not host a DIY centerpiece party? Each year, a few weeks before Easter, I get lots of emails and questions about Easter decorations and tablesettings. Here's a party theme that will not only allow you to spend time with your friends, you can go home with a beautiful centerpiece... just in time for your Easter Sunday celebration. It's also a great party plan for that DIY bride or class reunion, too!

 

THE SET UP

This is a very simple party to host. You provides the drinks, the food, and a large workspace with plenty of room. Guests will bring what they need for her own centerpiece plus tools like floral wire, floral sheers, ribbon, etc. You can all share supplies. Ask guests to email a list of what they are bringing- you may need to make a trip to Michael's, Hobby Lobby or a local floral supply store to pick up the basics if you don't have them. If you are planning this party for the week of Easter, you might also set up a station to dye Easter eggs. That way, you can have eggs already dyed for the kids to decorate.

I've been so in love with the purple hues of Spring... inspired by Radiant Orchid, the Pantone color of the year. I used that as the foundation for my color scheme with pretty plates, napkins, straws and flowers in those purple tones to anchor the look. I added a special dessert cocktail in the same color palette to make it really special!

Get annuals or herbs from the garden center in addition to cut flowers. Later you can plant them in the yard and enjoy them all summer long.

In the Spring, I always like to use herbs or flowers from the garden center for my centerpieces... that way, after the party is over, I can plant them in the yard and enjoy them all summer long. I picked up a few bunches of tulips at the store, too. I got a twig wreath and some bird nests at the craft store and found floral foam, wire and twine there also. If you want a rustic look, use Mason jars in several sizes. If you are using metal containers, they tend to leak. To avoid this, fit a small jar or plastic container into the bottom and fill that with water. 

Cover your work space with a plastic backed drop cloth from the home improvement store or use brown craft paper... I used did both to make clean up easy. It is important to use layers of newspaper if you will be dying eggs; they make a mess and the stain is virtually impossible to remove.

FOOD & DRINKS

Girls Night is soooo about the cocktails and quality time catching up with friends but since this party is centered around an activity, I wanted to keep the menu very simple and did not want to have to fuss with the bar. Seagram's Escapes were not only the perfect colors for the party, the wide variety of flavors insured there would be something for everyone. Put them on ice and offer some fruit mix-ins; they come in 4-packs or you can find them at Sam's and the big stores in multi-flavor cases; perfect for a party.

Keep the food simple as well. A cheese board with 3-4 cheeses plus crackers, fruit, honey, jam and other pairings is the perfect way to start the party. It is easy to assemble and there's no cooking required. Make one of your party favorites that is easy to eat standing up or while working. I made Puffy Party Squares because they are easy, fast and inexpensive but also because everyone loves them. And because there has to be something sweet on the menu, I came up with these incredible Very Berry Ice Cream Floats for dessert... again, very simple, no cooking required and completely addictive.

Very Berry Grown Up Ice Cream Floats

Here's the how to:

VERY BERRY ICE CREAM FLOATS

1 small container fresh blackberries or raspberries

1 half gallon container vanilla ice cream

Chambord Liqueur

4 Seagram's Escapes, Black Cherry Fizz flavor, chilled

Chill the glasses in the freezer so they are cold.

Put 3 blackberries or raspberries in the bottom of a glass. Muddle slightly with a wooden spoon to break up the fruit. Add 2-3 scoops of vanilla ice cream. Pour over 1 tablespoon of Chambord liqueur. Fill each glass with the Seagram's Escapes... add a straw and enjoy!

THE ACTIVITY

Making centerpieces and decorating eggs can be as easy or as complex as your time and patience allow. If you look at Pinterest, you can see a million different ideas for every taste and every budget. I'm a big fan of cheap that looks expensive so that's what I was aiming for with my flower arrangement. I also like the idea of repurposing the flowers in the garden or container after the party is over.

My own style is very relaxed and easy so my centerpieces tend to be rustic and take about 6 minutes to create. When making a centerpiece for a dinner table, I want it to be low so guests can see each other across the table. Here's what I came up with using annuals and one bunch of tulips. After Easter is over, I'll plant the annuals in containers to brighten up my deck this summer. 

Use garden center annuals to create a lasting flower arrangement. Carefully remove the annuals from their plastic container, keeping the root ball intact. Put it into a plastic bag and secure with a rubber band. Use one plastic sandwich bag for each plant. Make sure the soil is damp- but not too wet. Arrange the flowers in a platter, basket, wreath or other short container. Add some fresh cut flowers also for a little height. Done!

This could even be a wonderful family get-together with the cousins or a fun annual neighborhood party. The adults can make flower arrangements and the kids can decorate eggs at a craft station set up with stickers, glitter, glue and other supplies.

Simple Summer Fun: Beat the Heat with Homemade Popsicles! 

In the past, popsicles were just for the kids. Not anymore! Popsicles today are as diverse as the many flavors you can use to create them. I got on a popsicle kick last summer and started making my own. Now, a year later, I am completely obsessed with these frosty concoctions and have lots of new ideas for fruity and creamy creations. I prefer to keep it simple and use plastic cups as molds because they are flexible and release the pops easily but there are many different inexpensive plastic popsicle molds available that you can buy almost anywhere.

TRICKS FOR FAST, EASY POPSICLES

1. Use chilled ingredients when you can so your pops freeze faster. Allow pops to set up and freeze a bit before inserting the sticks so they will stay centered.

2. If you are layering flavors or colors, you have to allow the first layer to freeze completely.

3. If you are using fruit or other add-ins in a juice based liquid, it will usually float to the top of the cup- which will be the bottom of the pop. If you want it to be distributed throughout the whole popsicle, you have to add it as they set up.  

4. When using fruit or mix-ins with a cream based pop, it will usually stay suspended throughout the pop.

5. If you are using crumbs or sprinkles, add a bit of liquid to them and allow them to freeze completely before adding the other layers.

6. Anything with a high fat content like heavy cream or Half and Half tastes great- but won't set up as hard as whole milk will so use it in moderation or you will have a difficult time getting the pops to release from the mold.

7. Fruit juice and tea freeze very hard so add some water and a bit of sugar before freezing.

8. Fresh fruits freeze well and taste great. Puree the fruit and add a little agave nectar, simple syrup, or honey to sweeten. Artificial sweeteners don't freeze well for some reason. I like to use infused simple syrup- like mint or vanilla to make the fruits really exotic and full of flavor.

9. If you want to add soda to your pops, it's better to let them go flat first or you'll have lots of bubbles in the texture and they'll probably overflow in the freezing process.

10. Leave a little room at the top of the mold because the liquids will expand when they begin to freeze and spill over unless you allow some room.

11. Alcohol does not completely freeze. If you want to make adult versions of your pops, you'll need to dilute the liquor with some fruit juice or water. I recommend making the pops with very light liquor then serving the pops in a pretty glass with a shot of the chilled libation.

12. To remove pops from plastic molds or cups, very quickly dip them in warm water or rub between your palms for a couple of seconds and they should release.

MOLDS FOR FROZEN POPS

I typically prefer to use small plastic cups for my frozen treats for a variety of reasons: they have a wide mouth so they are easy to pour and layer and they are flexible so the pops release easily. Small plastic cups are also the perfect serving size , they store easily, and you can wash them to use them over and over again. They also help keep melting pops from making a huge mess and still look very pretty in a bowl full of ice for serving, especially the clear plastic cups like these I made with blueberries and strawberries for 4th of July.

 

There are also lots of innovative popsicle molds on the market like these fun tray and straw molds which allow you to sip the popsicle as it melts.

When I was a kid, we'd make our own popsicles using Kool-Aid and a plastic ice tray. While we didn't have popsicle sticks so my mom would give us one or two in a Dixie cup and send us outside to eat them.  My current favorite summer serving solution is a spin on this old school classic. I serve popsicles in plastic glasses for a party. For the kids, this helps keep mess to a minimum and for the adults, you can ramp up the festivities by pouring over your favorite chilled libation. COCKTAIL POPSICLES

Along the same lines, another big trend is cocktail popsicles. Freeze your favorite cocktail into a frosty bite. You can serve these in cups, cocktail glasses, or on a big tray of ice. Remember that alcohol does not completely freeze so you do need some other ingredients and limit the amount of alcohol in the pop. I often put a bottle of my favorite libation (vodka, bourbon, rum, liqueur, etc) into the freezer for a few hours and then simply pour it over the pop served in a pretty glass. Everyone loves this and it is so refreshing as a dessert after a heavy meal or to start the party rocking on a hot night. Get the recipe for my Sangria pops...

Weekend Cocktail: Raspberry Vanilla Lemonade

I poured a few things together after our photo shoot at the Sonnet House and came  up with this fantastic raspberry vanilla lemonade. You have to try it- it is so delicious and perfect for summer entertaining. I made a hi-test version and one without alcohol for the kids; however when serving both at the same party, make sure you keep them separated or labeled.

First, make up the vanilla bean simple syrup... it keeps in the fridge for a good 3 weeks or so. That way, you have it when you need it. You can do the same thing with mint, thyme. basil, or other herbs.

RASPBERRY VANILLA LEMONADE

Makes about two quarts but it depends on how strong you want the lemonade to be- you can stretch it to a gallon by adding more water. I like it strong because it is always diluted when you add ice. 

INGREDIENTS

2 pints fresh raspberries

2 cups fresh squeezed lemon juice

2 cups sugar

2 cups water

1 vanilla bean

2 quarts cold water*

* add the water to your taste. More if you like it weak, less water if you like it strong. I used about 1 quart water and then added a splash of chilled club soda at serving time to make it a bit fizzy.

OPTIONAL INGREDIENTS

Raspberry vodka

Chambord

Chilled club Soda

Lemon wheels

First, make the simply syrup. Put the sugar and water (equal parts) in a pan and bring to a boil, stirring occasionally. Turn off the heat. Split the vanilla bean down the middle, do not cut it all the way through. Use the tip of your knife to remove the tiny brown seeds inside the vanilla bean. Scrape those into the pan and put the entire pod into the pot and allow to cool completely. I usually put this into a canning jar and store it in the fridge. I leave the vanilla bean in the jar but remove it before using.

For the lemonade: Put one pint of raspberries and the Chambord (if using) into the bottom of the pitcher. Let the berries soak up the Chambord for a while. Use a wooden spoon and mash them to get as much juice as you can out of them. I actually whirred them up with my immersion blender to puree them but you can do it either way. Add the lemon juice and stir together. Add half of the vanilla simple syrup. Stir. Taste. Add the water to your taste. I used about 1 quart cold water and added more of the simple syrup to my taste. But I happen to like it a bit sweet and really strong. Add the remaining raspberries.

If you are adding alcohol, reduce the amount of water to 2 cup. Add 2 cups raspberry vodka. At this point, I sometimes like to put it into the freezer for a few hours and get it slushy. I add one or two bottles of chilled club soda at serving time. If it is a hot day and the temperature requres lots of ice, I always make the lemonade strong without a lot of extra water because as the ice melts, it waters down the lemonade. Just something to think about!

Weekend Cocktail: Champagne Cocktails Perfect for New Year's!

There are lots of cocktails featuring Champagne and I happen to love all of them:)

For those of you with a love for the bubbly and something to celebrate, check out these Champagne cocktails, all perfect for that toast to the New Year!

Pretty Delicious: Chambord CocktailCLASSIC CHAMPAGNE COCKTAIL

Soak a sugar cube in Angostura bitters. Drop the cube and a twist of lemon in a Champagne flute. Top with chilled Champagne. Cheers!

MIMOSA

The perfect way to start out the New Year, a Mimosa is a must for your brunch menu. Make them by the glass for a small gathering or by the pitcher for a crowd. For one: add a splash of orange liqueur like Grand Marnier to each glass. Fill 2/3 with chilled fresh orange juice. Top with chilled Champagne. For a pitcher use a 1:5 ratio of orange juice to Champagne and stir in 1/4 cup orange liqueur.

CHAMBORD CHAMPAGNE COCKTAIL

Made with Chambord black raspberry liqueur and Champagne, this cocktail is as pretty and festive as it is delicious! I featured this one for New Year's last year and everyone loved it! Drop a big, juicy blackberry or raspberry into the bottom of each glass and add a shot of Chambord. Chill the Champagne and top each glass as guests arrive!  Get the recipe...

The King's Peach CocktailTHE KING'S PEACH

I created this Champagne cocktail named for the Oscar winning film The King's Speech for an Oscar party. Use fresh or frozen peaches and peach nectar... top with a little Champagne. Get the recipe... 

BELLINI

Made with peach puree or peach syrup and Prosecco, this refreshing Italian version of the Mimosa is delish! To make it easy, I always just use peach nectar you can find in the International aisle of the store and top with Prosecco which is Italian sparkling wine. Use one ounce peach nectar to four ounces Prosecco. 

KIR ROYALE

Another beauty, this classic cocktail is simply an ounce of Kir (Creme de Cassis) topped with Chilled Champagne.

POINSETTIA

A classic Southern holiday punch, this recipe is easy to make in a punchbowl for a crowd: One chilled bottle of orange liqueur like Grand Marnier or Triple Sec, four bottles of chilled Champagne, and 1 large bottle of cranberry juice.

FRENCH 75

This classic cocktail is one of my favorites any time of the year. In a cocktail shaker with ice add: 1 ounce gin, 1/2 ounce each of simple syrup and lemon juice. Shake until well chilled. Pour into a chilled flute. Top with chilled Champagne.

Make Easy Indoor S'mores

Do you love S'mores... just talking about them makes me want one. I have been showcasing new ideas for some of our favorite summer classics and I do think this is my favorite one.

 

 

Why wait for a campfire or fire for that matter to make up a batch of S'mores? I have perfected Indoor S'mores and I could not wait to share them with you! Perfect for a party or even just a night in front of the tv, make some of these up for the best-ever comfort food treat. They don't go soggy so you can make them for a picnic or take them to a party as long as you keep them in a cool spot. Make some up and let me know what you think!

INDOOR S'MORES

1 box of Graham crackers

1 bag of mini-marshmallows

Nutella Chocolate Hazelnut spread (you can find this at almost any grocery store- even Wal-Mart)

Fill up sheet pans with Graham crackers. Spread each with a thin layer of Nutella. Put 6-7 mini marshmallows on top of each. Put under the broiler for about 2 minutes. Watch to make sure they get golden brown. Take them out and let them cool slightly. Make sandwiches by pressing two together. Eat right that moment or let them cool completely and wrap each with plastic wrap. Keep cool until serving time but do not chill them in the fridge or the cracker will get soggy.

Put the tops and bottoms under the boiler for about 2 minutes until the marshmallows are golden.Let them cool slightly and assemble into sandwiches.Let the s'mores cool completely if you want to wrap them up. Wrap each individually in plastic wrap and store in a cool place. Don't put them in the fridge.
