Weekend Cocktail Recipe: Chambord Champagne Cocktail

Bubbly, sparkling Champagne. There is no beverage more festive or more associated with celebrations than Champagne. And what’s New Year’s Eve without Champagne?

Photo: Arden PhotographyBut adding a mere teaspoon of raspberry liqueur to your Champagne elevates the celebration to another level. Chambord is a premium black raspberry liqueur named for the French town where it had been made since 1685 from cognac twice infused with raspberries, blackberries, and currant along with Madagascar vanilla and secret spices. Best paired with a crisp French Champagne, the color and the taste of this cocktail is joyful and jolly; everything you’d want as you ring in the New Year

A half hour before guests arrive, chill bottles of Champagne in cooler or bucket filled with one half ice, one half water. The serving temperature for Champagne should be approximately 43-48 degrees Fahrenheit.  Drop one blackberry or two raspberries in each Champagne flute and carefully add one teaspoon of Chambord onto the fruit. When guests arrive, pop the first cork and fill glasses. The golden Champagne will turn dark pink and the berries will float to the top, lifted by the effervescent bubbles.

Easy Entertaining: Host a Champagne & Chevre Party

Many of you know of my love of cheese and of Champagne. I have just learned that my two loves pair perfectly! Champagne or sparkling wine pairs so nicely with goat cheese that we built an entire party around it! This party theme would be perfect for New Year's, for a bridal shower, a girls' night in party, or just a glorious way to spend the evening... grazing through different goat cheese and wine pairings. Here's all you need:

Belle and the Bees Spreadable Chevre (flavored with honey)

Fig Breakfast Chevre

Montrachet Style Goat Cheese

Greek Kiss

Next, the accompaniments:

Quince Spread (or Dulce de Membrillo, quince paste from Spain)

Fig Spread

Olive and Sinclair Cinnamon Chili Chocolate

Marinated Artichoke Hearts

Assorted Olives 

Honey

Proscuitto (Italian cured ham)

Fresh baguette loaf (or other fresh bread)

We tried a reasonably priced French Champagne and loved it with the Chevre and with the chocolate. Champagne Aubry Brut Jouy-Les-Reims Premier Cru ($35) was on special at Whole Foods and was as nice as any $50 bottle of bubbly with more recognizable names. Try it! We tried this Champagne with two tablespoons creme de cassis, a blackcurrant liqueur and it was wonderful.

Best Combinations

Cut the baguette into thin slices. Spread the honey chevre and grate it some of the chocolate over the top and broil until it becomes melty. Divine!

Another good one- spread or crumble the goat cheese onto the bread, add proscuitto, olives, or artichoke hearts. Broil until cheese melts and bread is toasty. Yum. Like a mini-pizza.

Fig spread, goat cheese, proscuitto, and a drizzle of honey. Salty sweet deliciousness.

Mix and match, try your own concoctions and have a great time!

Holiday Sparkle: Martie's Top 11 Champagne & Sparkling Wine Picks

Image by Arden PhotographyWhether you want to toast the season or ring in the new year, at some point, you'll probably pop a cork in the next few days. I'm no expert but I do know what I like. And what I like lately is pink. That's right... pink. When it comes to sparkling wines or beautiful champagne, it seems I have quite a passion for pink. I've been keeping a list of all of my favorites this year so I would be able to help you with your shopping. Not all of my selections are Rose' but quite a few are. Don't let this scare you. These are as delicious as they are beautiful! I know just how intimidating buying anything bubbly can be. With that in mind, here are my top picks for champagne and sparkling wines.

Most are affordable, some are a little pricey.... let your budget and your menu be your guide. Cheers! 

 

FRANCE

A. Margaine NV Rose’ Brut Champagne: (Non-Vintage) One of my favorites, but perhaps not so easy to find since only 600 or so cases were produced. A very delicious and extremely high quality Rose’. About $49.

Champagne Aubry Brut Premier Cru Jouy-Les-Reims Just had my first bottle tonight and completely enjoyed it. Perfect for a toast or aperitif. Hint of apple and cocoa. Was delicious with chocolate. Let it warm slightly, don’t serve it too chilled. About $34 and well worth it.

Bailly Lapierre Rose’ Brut Cremant de Bourgogne: Sparkling wines made in the Burgundy region most closely resemble Champagne but can be a much better value. This one is no exception. Made from Pinot Noir and Chardonnay grapes, this fresh, light-bodied dry sparkling wine with a little hint of strawberry is festive and fun. About $17.

USA

Scharffenberger Mendocino County Brut Made in the traditional Champagne method in California, this bubbly has a slight flavor of vanilla and perhaps a little taste of toast or baked bread and pairs perfectly with rich creamy cheese, and fresh fruits. About $24.

Gruet Rose’ Brut: Very cherry or berry in flavor and in color. This rose’ sparkling wine is perfect for brunch or lunch, but it is also a nice opening act for a dinner party or celebration. Gruet is in Albuquerque, New Mexico which is very surprising and so is this wine. Very delicious and affordable at about $15.

Schramsberg Mirabelle Brut Rose’: Delicious with pizza, pasta, grilled salmon and BBQ chicken, this versatile blush pink sparkling wine is perfect for paring with food on a warm summer evening. Serve it well chilled. About $20.

Schramsberg Blanc de Blancs (any vintage is good. I’ve had the 2005 and 2007) This chardonnay based brut (dry) sparkling wine was famously used by President Nixon at the “Toast to Peace” in Beijing, China. Dry and crisp with the noticeable flavors of green apple, lemon, and pineapple. Perfect with shellfish- oysters in particular. Also good with Gouda or other hard cheese. About $36

SPAIN

Casteller Cava Brut: From the Iberia region of Spain, this Cava, or Spanish sparkling wine is fresh and crisp; it is best to drink it well chilled. You’ll taste a hint of strawberry so it is perfect to blend with juice for a Mimosa and wonderful with Manchego or other Spanish cheese. Very drinkable, very affordable. About $12.

Freixenet Brut de Noirs: This Cava is just perfect if you only want to serve one type of sparkling wine for a large party. It’s very affordable, completely drinkable, and has a beautiful salmon-pink color. A great bargain at $10.

ITALY

Pizzolato Fields Prosecco Brut: I love Prosecco and have rarely tried one I did not like. This one is from Whole Foods, so I know you can find it. It’s from the Veneto region of Italy from 100% certified organic grapes. You’ll taste some light, fruity flavors of peach, maybe lemon along with a little honey. This is nice for a late, lazy afternoon, as an aperitif, or with brunch mixed with any fruit juice. Refreshing, not overly sweet, and a bargain at $12.

ARGENTINA

Reginato CJR Celestina Rose of Malbec: I fell in love with Argentina many years ago but have never really cared much for the sparkling wines… until this one. Made in Mendoza, the wine making region of Argentina, this sparkling Malbec is almost cherry in color and taste. It’s dry but fresh and totally delicious. I found it at Central Market in Dallas but it may be difficult to find. Grab a case if you do. About $18.

The very best way to buy sparkling wine or Champagne is to try them at a tasting and make notes about what you liked so you can reference them later. I was lucky enough to attend a tasting with Ray Isle from Food & Wine magazine where we sampled about 20 different wines in an afternoon. Here is his list of affordable sparkling wine for 2010.Your local wine shop, Whole Foods, culinary schools, and cooking events will often have tastings hosted by experts. Look for the events in the paper or search online. It's a fun time- a great way to spend the afternoon!

MARTIE'S BEST HOLIDAY COCKTAIL RECIPES 2010

PEPPERMINT BARK MARTINI: Smooth and creamy with a peppermint kick. Made with vanilla vodka, Godiva White Chocolate liqueur and creme de menthe. Decadent. Delicious. Almost dessert!

HOT BUTTERED RUM: A holiday favorite: brown sugar, cinnamon, cloves, and nutmeg. Oh, don't forget dark rum. Yum.

HOLIDAY DOUBLE BUBBLE: One of the easiest and prettiest drinks for the holidays. Prosecco and Italian sparkling soda. Garnish. Done!

OATMEAL COOKIE MARTINI: Tastes just like a warm cookie straight out of the oven- except with a cocktail kick!

BOURBON HOT TODDY: Made with a bourbon, little lemon, orange liqueur, and cinnamon, this will really warm you up on a cold night!

HOLIDAY HOT CHOCOLATE: Worth the effort. this one is even more special when you add a little vanilla vodka, your favorite bourbon, or dark rum. 

POMEGRANATE CRANBERRY KISS: An easy signature cocktail for your holiday party. Mix up a big batch and serve in a pitcher or dispenser. Looks beautiful and tastes wonderful.

PRALINES N CREAM MARTINI: Smooth and delicious, this Southern favorite is made with praline pecan liqueur. Simple!

HOT APPLE PIE TODDY: Made with Tuaca, an Italian liqueur and apple juice, this one tastes like holiday in a glass.

Santa's Cookie Workshop Party

Baking cookies and cookie decorating is a timeless holiday tradition. Make it into a wonderful memory for the kids in your family. It’s a perfect holiday party theme for schools, churches, and neighborhoods.

 

This is the perfect last minute party for kids hanging around the house, waiting for Santa to arrive. They can make their own cookies to leave for Old St. Nick and all you need to throw the party is listed below.

Send an email or even call in your invitation since it is last minute during the busy holiday season. Do ask for an RSVP...you need to know how many guests so you don't overbuy supplies.

I usually bake all of the cookies in advance so the party doesn't take all day. I'll let each child cut out a few cookies when they arrive in their favorite holiday shape so there is that delicious smell of cookies baking as the party progresses.

Clear off or pop up a large table and cover it with white or brown kraft paper you can get at the craft store.

Line the center of the table with supplies like tubes of icing, sprinkles, candies, gum drops, etc.

Make a work station for each child and write their name above it in crayon so they know where they are to design their cookies.

Design a few simple cookies in advance so the children can have an example.

Food and beverages should be simple. I like to offer bite size treats with a hot chocolate bar for this party. Keep it simple and self-serve so your hosting duties are easy.

A few party games, caroling, a holiday movie, or a visit from Santa can keep the kids occupied while their creations dry. Make sure to have some paper bags, tin containers, Asian take-out boxes, or foil wrap available so guests can pack up their cookies to take home after the party.
