Fire Roasted Crock-Pot Chipotle Chili Recipe

If you are like me, you're always experimenting with your chili recipe. While I love my original recipe, by adding fire roasted tomatoes and some chipotle plus fresh salsa, you give your chili a fresh Tex-Mex kick! Try it and see what you think. Smoky and full of flavor, this Crock-Pot chili recipe will be your new go-to chili recipe for tailgating, game day or any day! To make serving easy, I like to serve in individual Frito bags... tastes just like the Chili Pie that my mom used to make! Set up a condiment bar with toppings so guests can customize to their taste.

Fire Roasted Chipotle ChiliMARTIE'S FIRE ROASTED CHIPOTLE CHILI

 2 pounds ground beef

1 large yellow onion, chopped

1 bottle of your favorite beer

2 28 ounce cans fire-roasted tomatoes, crushed (or whir them in the food processor)

2 15 ounce cans black beans, drained and rinsed

1 small can sliced Jalapeno peppers, drained and diced very fine (be careful to wash your hands!)

2 cups fresh tomato salsa (find it at most stores or make your own recipe)

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon chipotle chili powder (find it in the spice aisle; add a bit more if you like that smoky heat)

1 teaspoon black pepper

Serve in individual Frito bags for easy serve, easy clean up for tailgating!1 tablespoon Kosher salt

Brown the ground beef and onion in a skillet until the beef is brown and the onions are softened. Draiin off the liquid. Return to the heat and pour the beer over the mixture to deglaze the pan. Pour that mixture into your crock-pot. Add the remaining ingredients. Cover and cook on the lowest setting for 4 hours.

Serve with condiments: Sour cream, grated cheese, sliced jalapenos, green onion, hot sauce, or any of your favorite chili toppings.

Martie Duncan and Guy Fieri: The party's on!OK- I am going to do a thorough wrap up of our weekend at the Metropolitan Cooking and Entertaining Show in Atlanta later tonight. We had a ball talking about parties and fun. Thanks to everyone for hanging out with us! We had SRO crowds at every show and met so many nice people!! Awesome!

Some of the nicest people we met were celebrity chef Guy Fieri from The Food Network and his posse.  Kleetus, Brunch (don't ask-- his name is Brunch!) along with Michael and Scott from Ergo Chef(the company that makes Guy's knives) were so great and a real blast! I have to tell you Guy is one of the most real celebs I have ever met-- very cool and completely nice. And his live show really was OFF THE HOOK! Loud and high energy like a rock concert-- completely fitting because Guy really rocks the house! Guy-- you are awesome! Check out Guy's sitesign up for his email and buy Guy gear there. Looking forward to cooking some of his recipes for our party crowd. Spring Showers: Host a Pretty in Pink Party for Wedding and Baby Showers

Many of you have emailed asking for party ideas for upcoming wedding showers, baby showers and  graduation parties so in the coming weeks we'll give you a few simple ideas to help you get started with your party plans. If you don't have a good idea for a theme for your upcoming party, why not build your party around a color? I do that quite often with striking results. Here are easy ideas for a "pretty in pink"party that builds around the color pink. Make drinks in your party color. If you don't have a good recipe, get a mix like we did for this party. Add ribbons, lanterns or other decorations to tie the theme together. Add pretty favors and you're done! Perfect for a wedding shower, baby shower, graduation party or Sweet Sixteen Party, just add personal touches to make the party uniquely yours. Baby pictures, baby booties or baby bottles will dress it up for a baby shower while tiny bouquets and pictures of the happy couple make it great for a wedding shower. An all pink candy bar  makes it party perfect for a graduation party or Sweet 16 soiree.

No matter--- we still had a great time. With loads of crafts, games and fun snacks, you'll create memories with the kids to last a lifetime. Hopping bunny races, balloon carrot racers, and creative ideas for egg decorating kept the kids busy. Pre-dye all of the eggs and let the kids decorate them with glitter, felt, construction paper, flowers or pretty ribbons.
